has a freezer of deer meat, would it be ok to take it out and thaw and then can?

Assuming it was frozen quickly (didn’t lie around awhile), and then canned right after thawing, absolutely ok.

I agree, as long as the meat wasn't spoiled when it was frozen, and isn't allowed to spoil after it is thawed, I don't know any reason why it couldn't be canned.

Only take from the freezer as much as you can safely can in a single day.
